On April 13th, Samiha and Catherine will host a tour of fermented foods, many sourced from South and Southeast Asia and many sourced from their kitchens including fermented bean curds, som moo and ssamjang tempeh. The program will include a fermentation workshop where the audience will learn how to make their own sourdough starter while discussing the history and implications of arguably the first fermented food: sourdough bread. At the end of the program, participants will take home a jar of a starter they’ve initiated with the wild yeast present in the air at Waller Gallery soon to be infused with that of their homes, creating a sort of intrinsic narrative map.
